Fundamentally both of these calculations are the same, however, they are applied on their respective Wheat values. The Clean Wheat Calculation looks at the Total Clean Wheat material and the Dirty Wheat Calculation looks at the Total Dirty Wheat Material.
Both calculations are:
(Total Flour Product - (Total Flour + Ingredient Material))/Total Wheat Material
In the system this calculation is also displayed as a percentage, so the result is multiplied by 100.
